Taliwang Chicken

HISTORY

Taliwang chicken or Ayam Taliwang is a traditional culinary made from main ingredient free-range chicken, which is mixed with specified ingredients to give a strong flavor. This culinary was first introduced by the community of Taliwang Lombok West Nusa Tenggara province which is close to the island of Bali, Indonesia

Therefore, the development of the culinary tradition of Taliwang chicken is closely related to the existence of the Trans Taliwang community in the Cakranegara sub-district, Mataram City, West Nusa Tenggara province.

INGREDIENTS:

  • 1 Chicken
  • 4 cloves garlic
  • 6 cloves of red onion
  • Lemongrass
  • 2 bay leaves
  • 3 pieces of lime leaves
  • Curly Red Chili
  • Cayenne pepper
  • Lime
  • Ginger
  • 250 ml of coconut milk
  • 2 tbs of salt
  • 50 grams of brown sugar
  • 1 tbs Sweet Soy Sauce
  • 1 tbs Powder Broth
METHODS:

Step #1. Coat the chicken with lime and salt, then let stand +/- 20 minutes.

Step #2. Prepare a blender or food processor, cut 3 cloves of garlic and 6 onions, 6 cayenne peppers, 1 ginger, 8 red curly chilies, 1/2 tbs of grilled shrimp paste, add half a tomato, 50 ml of cooking oil, then blend until smooth.

Step #3. Heat the pan/frying pan, add a little oil, then saute the spices until smooth, add 2 lime leaves, 2 bay leaves, 1 stalk that has been crushed, then saute the spices so they don't burn, pour the coconut milk, add the palm sugar, add salt and powdered broth, cook until the sauce is reduced.

Step #4. Prepare and heat the pan by giving a little oil to roast the chicken, apply the remaining seasoning, roast until evenly distributed.

Step #5. Done, Taliwang Chicken Ready to Eat.
